Embers, the Secret of Shashlik
Shashlik is cooked not over flames but over coals. They are red and give heat, like a stove. The meat is put on a skewer, a long stick, and turned so it cooks on all sides. The fat drips onto the coals and sizzles, and the smoke rises and soaks the meat with its smell. That is why shashlik smells better than plain meat fried in a pan.
